2002-08-30|Sunatori's Refreezing Defrosted Food
You asked for it
- It is said that refreezing a defrosted food is dangerous for health. However, I have been repeatedly freezing and refreezing defrosted foods for many years. Yet, my family with 3 small children have apparently suffered no ill effects.
- Repeated freezing and refreezing a defrosted food may break down the food and diminish its taste, but the compounds of nutritional ingredients are not destroyed. The number of bacteria/microbes may increase while the food is thawed, but the effect is only cumulative. Hence, it is an urban myth that there is any safety issue in refreezing a defrosted food.
- The situation is similar to the blanket recommendation that fat/oil should be avoided. In fact, one has to avoid only saturated fatty acids because unsaturated fatty acids are better for health than carbohydrates are.
