- I make my own yogurt from pasteurised milk and yogurt seed. When the last batch was ready, I looked at the transparent plastic container, and found that the yogurt has split into 2 layers. The interface between the layers looks like a zig-zag sine wave pattern with the amplitude of about 10 mm and the wavelength of about 20 mm. What is the thermodynamic explanation?
